This sounds like a great project.

I recommend that authors always read the fine print re copyright and in 
general only grant the minimum needed for publication, regardless of 
whether or not it is a paying gig. For example, wouldn't you like to 
retain the right to publish your own essay if you decide to write a 
book? Or, to publish it in another journal? Publishers offer a 
"standard" contract, but all contracts are negotiable. I suggest 
writers consult with or join organizations like The Author's Guild or 
the National Writer's Union http://www.nwu.org/nwu/ and learn about 
their rights.
