(NAME-MCE) resources for multicultural secondary methods

I am teaching an English learner course to a mixed group of
undergraduate preservice teachers. I have many secondary students
majoring in math and science who do not know how they can create a
more multicultural classroom in terms of curriculum, including
incorporating multiple perspectives. Does anyone have resources
(books, journal articles) that I could gather and share with them? (I
am an elementary methods person, so this is a little out of my area).
